A great condiment that is super delicious that goes so well with any dish!
Ing:
1 tbsp oil
2 cups vinegar
1 tsp turmeric
1 tbs achar masala
2 tbsp salt
8 small pearl onions
1.5 cups green beans
2 cups of cauliflower
2 cups carrots sliced
3 to 4 jalapenos
1 cup shredded cabbage or coleslaw
3 cups water to blanch the vegetables
Method:
In a pot boil 3 cups of water and add the vegetables in it and turn the stove off and cover it with a lid and don’t open it for about 5 min. After five minutes drain the water and keep the veggies on the side.
In the same pot add 1 tbsp oil and the achar powder and let it cook up for about 30 seconds so you can get the spices be very flavorful, next add the vinegar, turmeric, salt, and the blanched veggies. Do a taste test to make sure this condiment is according to your taste.
This can be stored in the refrigerator for a good 6 months.
