This lemon pickle is going to knock your socks off! Super easy and instant lemon condiment!
8 to 10 lemons quartered
1/4 cup cluster beans
6 jalapenos sliced or quartered
1 large fresh ginger skinned and sliced thin
3 tbsp salt
1 tbsp turmeric
1 tbsp chilli flakes
1 cup lemon juice
2 tbsp jaggery sugar
In a microwave safe glass bowl start by adding the lemons and all the above ingredients except the jaggery sugar. Microwave for 16 min intervals of 4 minutes, every four minutes take it out and give it a good stir and pop it back in the microwave until you reach a total of 16 total minutes. This can be stored in a glass bottle and put it in the refrigerator for a good 3 months! Lastly don’t forget to give it a taste test and adjust according to your pallet.
