Dough Ing:
5 cups white all purpose flour
1 tsp salt
2 tbsp sugar
3/4 cup milk
1 egg
1 tbsp yeast
1/2 cup mayonnaise
3/4 cup warm water
2 egg yolks for egg wash
Method: Mix the warm water and warm milk together and add the 2 tbsp of sugar and yeast in it and stir until all the ingredients have combined, leave this on the side to bubble up. Next mix the flour, salt, egg, and mayonnaise and mix all the ingredients really well then add the milk and water mixture and bind the dough, once the dough comes together, knead for about 5 minutes until you have a nice soft dough. Let this dough rest by covering it and letting it proof until it is double in size. Divide the dough in half and cover the dough to prevent it from drying. With the one half of the dough make equal sized dough balls, you should be able to get about 10 to 12 from one half of the dough. Cover the rest of the dough balls to prevent drying. Roll out the dough as stated in the video and cut in half, criss cross the dough and add the chutney first then add the stuffing mixture and fold as shown in the video. Let the buns rise one more time, spread the egg wash on it and bake it in a 350 for 25 degree oven for about 25 min or until golden brown.
Makes about 24 buns total
