Ing:
1 whole chicken plus
4 chicken pieces or
12 chicken pieces of your choice Marination for the chicken
1 tsp salt
1 tsp black pepper
1 tbsp ginger and garlic
1 tbsp chili garlic sauce
Curry Ing:
2 to 3 tbsp olive oil
10 to 12 curry leaves
1 tsp fresh ginger and garlic
2 dried red chili peppers
6 oz tomato paste
1 tsp lemon pepper
2 tbsp paprika
1 tbsp mango powder
1/2 cup fresh cilantro
1/2 lime for garnish
1/4 cup chopped coriander for garnish (optional)

Method: Marinate chicken and keep aside for at least 20 to 25 minutes. In a sauce pan add the olive oil ad wait till it comes to temperature, add the curry leaves and the ginger and garlic and make sure you sauté this well until the ginger and garlic has cooked up a bit, next add the dried chili peppers and sauté for couple seconds before you add the tomato paste in there, make sure and cook this mixture until it has gotten a deep maroon color to it. Next, let’s add the paprika, mango powder and lemon pepper and sauté for a couple more minutes, add salt and give it a taste test at this time. Lastly add the marinated chicken and give it a good mix, making sure that your chicken has mixed really well with the sauce mixture, turn heat to med low and cover it, cook this for about 30 minutes or until all the chicken has cooked through. Put it in the sewing platter and splash it with some lime or lemon juice and garnish it with the fresh coriander.
