This is a great and power punched salad that is full of fiber, iron, vitamins and a lot of minerals
Ing:
3 cups cooked quinoa
1/2 red bell pepper chopped
12 green bell pepper chopped
1 bunch spring onions chopped
1 cup coleslaw or shredded cabbage
1 cup quartered pichuberries or gooseberries
1 large english cucumber chopped
1 cup jicama chopped
1/3 cup of fresh coriander chopped
Dressing:
1 lemon juiced
1/2 lime juice
1 tsp olive oil
dash of salt
dash of black pepper
Method:
Boil the quinoa and let it cool, next cut up all your vegetables and keep them aside. In another bowl add all the vinaigrette ingredients and mix it really well then go ahead and add the quinoa and all the vegetables mix all this really well, top with chopped coriander this can be enjoyed cold or warm. Lastly do a taste test and adjust the taste according to your pallet.
