This is a very aromatic rice, that has simple ingredients yet a very festive and delicious sweet rice.
2 tbsp unsalted butter
2 cups rice (soaked for about 2 hours)
1 cinnamon stick
6 to 7 cardamon seeds
3 tbsp fennel seeds
pinch of yellow color 1/4 tsp saffron
1.5 cups of sugar
2.5 cups of water
1 cup slivered almonds
1/2 cup raisins
1/2 craisins (optional)
couple drops rose essence (optional)
For the garnish:
1 tsp unsalted butter or ghee
1/4 cup sliced almonds
1/4 cup pistachios
1/4 cup sliced coconut
In a large pot add the butter and let it melt once the butter it is melted add the cinnamon stick, cardamon pods, and the fennel seeds, sliced almonds, and raisins stir these ingredients well and then add the saffron and sugar. Stir all this really well at this time you will smell all the aromatic ingredients. Add the water and the rose essence and food coloring and stir until it starts to boil. Once you have a first boil add the soaked rice and then add the cardamon powder and wait for a second boil, cover the pot and decrease the heat to low and let the rice cook about 30 min or until it is cooked quickly.
For the topping:
Add a little ghee or butter and the coconut, sliced almonds, and pistachios, at this time you can add more saffron stir and make sure that the coconut and almonds have toasted a little, lastly add this toping to the rice dish and enjoy all or with lentil curry.
