Tortillas filled with curried potatoes and pan fried for a crunchy shell on the outside and a soft bite of potatoes and spices on the inside! A great appetizer or side dish….
4 to 6 Tortillas
2 cups boiled potatoes diced in bite size pieces
2 tbsp olive oil
1 tsp cumin seeds
1 tsp fresh ginger and garlic puree
3 to 4 curry leaves
1 tbsp parsly flakes
1 tsp turmeric
1 tsp mustard seeds
salt to taste
sambal chili paste (optional)
black pepper
splash of fresh lime
Put olive oil in a saucepan and add the mustard seeds, cumin seeds, curry leaves, ginger and garlic paste, green chutney, turmeric, and add all the boiled potatoes and mix really well. Lastly add salt, and the lime juice remove from stove and keep aside. In another frying pan add some olive oil and place the tortilla in it so it warms up a bit than start assembling them with the filling, you can choose to assemble them with just the filling or add a layer of chutney and then the potato mixture and pan fry in a little bit of olive oil!!
